Recipe of the Day- Baked Chicken w/Private Selection Bold & Savory Poultry Seasoning

Ingredients
Whole chicken or chicken pieces of your choice
Kroger Private Selection Bold and Savory Poultry seasoning
Vegetable Oil

Directions
* Pre-heat oven to 350 degrees
* Wash and pat whole chicken or chicken pieces dry
*Coat chicken in vegetable oil on both sides
*Sprinkle Bold and Savory Poultry Seasoning on both sides of chicken. 
(I like to cover my chicken pieces completely with the seasoning.)
*Bake at 350 for about 45 uncovered
*Turn heat up to 375 the remaining cooking time to crisp skin, 

Let chicken rest and enjoy!




Recipe of the Day- Oven Roasted Potatoes





Ingredients
6-8 red potatoes
1 large yellow onion
salt
pepper
parsley flakes
garlic powder
flour
vegetable oil

Directions
1. Preheat oven to 400 degrees
2. Roughly chop potatoes and leave the skins on.
3.Roughly chop onion.
4. Combine potatoes and onions in a bowl and season to taste with salt, pepper, and garlic powder.
5.Sprinkle flour lightly over potatoes and onions evenly.
6.Coat bottom of baking pan with vegetable oil thoroughly.
7.Place potatoes and onions in baking pan and make sure vegetable oil coats each piece evenly.
8.Sprinkle parsley flakes on potatoes and bake 30-45 minutes.

This dish pairs perfectly with steak, baked chicken, or is great as a snack on it's own!


Recipe of the Day- Bacon Deviled Eggs




Hopefully you have gotten rid of all those Easter eggs. I mean the smell of boiled eggs along are enough to make me get rid of them asap. Don't get me wrong I love a good hard boiled egg, but if they sit to long.......lol. The thing that I love more than hard boiled eggs is deviled eggs. As a child it was one of the first dishes I learned how to make. Although they were basic...eggs, mayo, relish, and paprika, they were the most delicious things I had ever tasted. Fast forward to adulthood and I have a more, should I say, sophisticated palette and nothing screams sophistication like BACON! Admit it bacon makes everything better and these little salty, creamy, deviled eggs are no exception. Check out the recipe below.





INGREDIENTS


 4-6
  • 6hard-boiled eggs
  • 3slices crisp cooked bacon, crumbled
  • 1tablespoon butter, softened
  • 3tablespoons onions, chopped finely
  • 3tablespoons sweet pickle relish, drained well
  • 1teaspoon yellow mustard
  • salt and pepper
  • 14-13cup mayonnaise

DIRECTIONS

  1. Cut eggs in halves lengthwise.
  2. Remove yolks.
  3. Mash yolks in medium bowl.
  4. Add relish, onion and bacon.
  5. Add butter, salt, pepper, and mustard.
  6. Mix thoroughly.
  7. Add mayonnaise to bind.
  8. Refill egg whites.
  9. Sprinkle with Paprika.
  10. Refrigerate to meld flavors

If you really want to get fancy chop cherry tomatoes and add for a delicious Bacon Egg Tomatoes take on this tasty treat!

Recipe of the Day- Black Eye Pea Casserole




Rainy cold days like today call for comfort food, and nothing is more comforting than cornbread and some type of beans or peas.  I went to my favorite soul food restaurant to get an order of their black eye pea casserole, only to find out they didn't have any today.  Imagine my disappointment when I couldn't get my comfort food fix. Mad that I couldn't get my fix, I decided this would be a great dish to try to make myself. I went to The Betty Crocker website and found the most delicious recipe. The recipe was extremely easy to make and is impossible to mess up. 


Ingredients

pounds ground beef
2 1/2
teaspoons seasoned salt

teaspoon white or black pepper

medium green bell pepper, chopped (1 cup)
1
small jalapeño chile, finely chopped
2/3
cup chopped onion
2
cans (15 to 16 ounces each) black-eyed peas, rinsed and drained
1
can (14.5 ounces) stewed tomatoes, undrained
1 1/4
teaspoons ground cumin
1
teaspoon garlic powder
3/4
teaspoon chili powder
1
cup Original Bisquick™ mix
1
cup yellow cornmeal
1/2
cup milk
1/2
cup water
1
teaspoon baking powder, if desired

Directions

  • 1Heat oven to 375°F. In 10-inch skillet, cook beef, seasoned salt, white pepper, bell pepper, jalapeño and onion over medium heat, stirring occasionally, until beef is brown; drain.
  • 2Stir black-eyed peas, tomatoes, cumin, garlic powder and chili powder into beef mixture. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches. Set aside.
  • 3In medium bowl, stir together all remaining ingredients. Pour evenly over beef mixture.
  • 4Bake casserole 40 to 50 minutes or until light golden.

Recipe of the day-Valentine's Day Cocktails


I LOVE, LOVE, LOVE a great cocktail. As Valentine's Day approaches I have decided to share a few delicious, sexy, and romantic cocktails to help you have a lovely evening. 



Up first a drink made for a Queen

Queen of Hearts

8 oz. Raspberry puree
4 oz. St. Germain Elderflower liqueur 
1 bottle (750ml) Moet & Chandon Rose Imperial Champagne
Fresh Strawberries or Raspberries for garnish
In a small pitcher pour raspberry puree and St. Germain, mix well.
Pour raspberry mixture to fill the bottom of each flute glass, top with Moet Rose Imperial Champagne, garnish with raspberries and serve.
Raspberry puree
In a small saucepan mix 1 cup raspberries, ½ cup sugar, and ½ cup water. Bring to a boil and stir until sugar dissolves. Let cool and pour through a fine sieve or strainer into a pitcher. Puree will keep refrigerated up to 1 week.




Love struck
Serves 4
8 oz Roca Patrón Reposado
4 oz Averna Amaro Italian liqueur
2 oz freshly squeezed grapefruit juice
4 dashes Orange Bitters

Combine ingredients in a mixing glass and add ice. Stir and strain into chilled cocktail glasses.
Garnish with orange peel. Enjoy with someone special.


Valentino's Delight

1 1/2 oz. bourbon
1 oz. ruby port, the sweeter the better
1 oz. Kahlua
1 1/2 oz. heavy cream
Ground nutmeg
Preparation

Fill a cocktail shaker with ice, add liquids and shake vigorously for 10 seconds. Strain into a large chilled martini glass. Gently sprinkle nutmeg on top.


Bailey’s Cool Raspberry
2 ounces Baileys Original Irish Cream
8-9 raspberries
Crushed ice
Place 4-5 raspberries at the bottom of a rocks glass and lightly muddle them.
Top with crushed ice.
Add Baileys Irish Cream.
Garnish with three speared raspberries.


Enjoy your cocktails and drink responsibly. 


Today's Recipe- Baked Barbecue Country Style Pork Ribs




I love to cook for my family but my recent return to work leaves little room to cook daily. I have to squeeze in all an housework, school work, and personal time in on the weekend. I have found that making meals that I can bake for about an hour or so while I'm working on other things, is the best way to go on my super busy days. Here is one of my family's favorite.

Ingredients 
1 pack of country style pork ribs
2 tablespoons of honey
1 bottle of honey barbecue sauce
salt
pepper
garlic powder
seasoned salt
parsley flakes
1 small vidaila onion

1. Place frozen pork ribs in a baking pan. Cooking them while frozen will help them to remain moist will baking. When you purchase the ribs from the grocery store wash them well and them store them in the freezer until you are ready to cook them.

2. Season pork ribs with salt, pepper, garlic powder, and season salt on both sides.

3.Chop onion and place over the seasoned pork ribs.

4. Drizzle honey over ribs and then pour barbecue sauce over the ribs. Be sure to cover every rib.

5. Cover ribs with foil and bake at 325 for about 1 hour and 20 minutes.

6. Remove foil, sprinkle with parsley flakes, and cook for another 30-45 minutes.

7. Let the ribs rest about 20 minutes before you cut and serve them.

I love how moist the country style ribs are when you cook them slowly. I usually pair this dish with rice, green beans, and rolls.

Recipe- Dump Cake

Ok I know the name isn't the best but when I tell you this cake is DELICIOUS......YES!!!! I learned about this cake via Ree Drummond on her Food Network cooking show The Pioneer Woman. This cake is so simple to make and takes no time at all.  Check out the full recipe below.




2 cans of fruit of your choice- I like peach, apple, cherry, or pineapple
1 stick of butter
1 box of cake mix of your choice- Once again my favs are yellow or white cake mix

1. Dump cans of fruit into a baking dish. I use 9x13 inch pan.
2. Smooth the fruit so that it covers the bottom of the pan.
3. Sprinkle the dry cake mix on top of the fruit. Be sue to cover all the fruit completely.
4.Smooth out any lumps of cake mix.
5. Cut stick of butter into small pieces and lay on top of cake mix. Be sure to cover the entire top layer of the cake while leaving small spaces in between each slice of butter.
6. Bake  at 350 degrees for 45 minutes to 1 hour.

You can also add spices to the fruit layer for added deliciousness!!
Add cinnamon if you are making an apple dump cake. Also add nuts to the top layer of any cake combination for an added crunch. My favorite combo is an peach fruit with yellow cake mix topped with whipped cream!!!!



Today's Recipes- Lemon Chess Squares

I have a killer sweet tooth and just about anything sugary will satisfy my sweet tooth. My husband loves chess squares so I decided to make some for Father's Day. Check out the recipe below.






  • You can use just about any type of mix. I have used strawberry and yellow also in previous recipes
  • 1 cup melted butter
  • 1 egg
  • 1 cup chopped pecans- you can leave them out if you don't LOVE pecans...I Love them.
  • Filling
  • 2 (8) ounce packages of cream cheese
  • 4 cups of confectioners' sugar
  • 2 eggs
  • Directions

  • 1. Preheat oven to 350 degrees
  • 2. Combine cake mix, melted butter,pecans, and egg in a bowl. Mix until blended and spread into a 9x13 inch pan.
  • 3.In a separate bowl mix cream cheese, confectioners' sugar and eggs until blended. 
  • *Tip place cream cheese in microwave for 1 minute to soften it and make it easier to stir.
  • 4.Pour cream cheese mixture over cake mixture and bake for 45 minutes.
  • 5. Allow in pan and then cut into squares.  Garnish with a sprinkle of confectioners' sugar and enjoy!!!
